Salted Caramel
Salted Caramel ice-cream. What a luxurious combination of tastes. This flavour is rich and with a smooth texture. For the most traditional palates this can sound like modern devilry, but believe me, there’s nothing better than letting yourself be tempted by this wonder!

Ingredients
- 125 gr. caramel sauce
- 250 gr. fresh cream
- 250 gr. milk
- 100 gr. sugar
- 1 vanilla bean
Step 1
First, you need to make the caramel sauce, so follow the link and then come back here.
Step 2
In a bowl, dissolve sugar in 125 gr. milk. Stir thoroughly to ensure no lumps are formed. Set aside and combine the remaining milk and cream in a saucepan on low to medium heat. Bring to just below boiling point. Tiny bubbles should appear around the edges of the saucepan. Remove from heat.
Step 3
Add the milk in which you have dissolved the sugar to the saucepan, stir and return to heat. Bring to just below boiling point again ensuring that you stir constantly. Your mixture should have the consistency of a custard. Cover and leave to cool.
Step 4
Once it has reached room temperature, refrigerate your mixture. When chilled, add the caramel sauce and mix all together. Pour the mixture in the bucket of ice-cream maker churn until frozen. This should take about 30 minutes.
Suggestions
For a softer-style gelato, serve immediately. For a firmer consistency that lends itself more easily to scoops, transfer to an airtight container and freeze for 1 hour before serving. I suggest this last option :)
